Barbuzzo's Salted Caramel Budino Choco Taco Is Back

Whipped cream, for serving. To make the salted caramel: Using a saucepan, bring sugar, corn syrup, and water to a boil over high heat. Do not stir, swirl the mixture to allow it to caramelize evenly. When it turns a dark amber color, about 3 minutes, remove from heat. Add the cream, but be careful — the cream will make the caramel foam a bit.

Salted Caramel Budino

Prep the wafer cookie crust, then divide the mixture between eight 8-ounce glasses or jars. Make the caramel pudding, then divide it between the jars. Set the budino in fridge to chill (this will take 3 to 5 hours). While the budino chills, make the salted caramel sauce. Pour the caramel sauce over the chilled budino, then sprinkle with sea salt.

Budino. In a large mixing bowl, combine the heavy cream and milk, then set aside. In a medium sauce pot, combine maple syrup, brown sugar, water and salt and place over medium high heat and bring to boil while occasionally stirring. Cook for about 7-10 minutes until caramelized. Remove from the heat and whisk in the cream mixture very slowly.

Add the butter, sea salt and vanilla and whisk to combine. Set aside and reserve. Make the pudding: In a saucepan, combine the maple syrup, brown sugar, water and salt and bring to a boil over.

In a small bowl, whisk the remaining ½ cup of milk and cornstarch. Heat 2 ½ cups milk in a small saucepan to a gentle simmer; Set aside. Whisk the egg yolks quickly in a large bowl.
