Topsy-Turvy Cake. Pouding chômeur is made by pouring a warm mixture of maple syrup and cream onto a cake batter. As the dessert bakes, the cake rises and sets up, and the maple-cream sauce, which has thinned out with more heat, migrates around the batter to settle at the bottom of the dish. In our version, a craggy, caramelized layer also.

Time to make the sauce. Bring the rum to simmer in a small sauce pan (about 2 minutes). Add butter and brown sugar and stir until melted. Add condensed milk and stir to combine. Remove from heat and allow sauce to cool. Then you can pour the sauce over the bread pudding when you're ready to eat!
