A collection of recipes with my favorite Peanut characters from the classic Charles M Schultz creation. In it was a simple recipe titled "Lucy's Lemon Squares." Bake for 10 minutes. Step Two: Make your filling. Blend eggs and sugar together in your food processor until pale and creamy. Add lemon juice and rind and blend together. Then add flour and baking powder and pulse. Pour the lemon filling over the hot shortbread crust and continue to bake until the middle is set.

Press in ungreased 8- or 9-inch square pan, building up 1/2-inch edges. 2. Bake crust 20 minutes; remove from oven. In medium bowl, beat remaining ingredients except additional powdered sugar with electric mixer on high speed about 3 minutes or until light and fluffy. Pour over hot crust.

Add the remaining ingredients, eggs, sugar, flour, and baking powder to the mixing bowl. Beat together. Once crust is done baking remove from oven.

The original filling recipe calls for 2 eggs, 1 cup granulated sugar, ยฝ teaspoon baking powder and 2ยฝ tablespoons lemon juice. I find this to be too sweet and too little filling, hence the measurements below.
