Preheat oven to 350ยฐF | 180ยฐC. Lightly spray a 12-cup capacity muffin tin with nonstick oil spray. In a large bowl, whisk together eggs and onion. Season with salt and pepper, to taste. step 1. Preheat the oven to 350 degrees F (180 degrees C). Grate the Mozzarella Cheese (2 cups). Peel and slice and soak Eggplant (1) in salted water. step 2. Spray the bottom of a large cup muffin pan with Nonstick Cooking Spray (as needed). Sprinkle the bottom of each muffin cup with a teaspoon of Parmesan Cheese (1 cup).
