1 envelope active dry yeast 2 1/4 teaspoons; 3 1/2 cups bread flour or all-purpose flour, plus more as needed; 1/2 cup warm water 100 degrees; 2 eggs for the dough and 1 egg for an egg wash; 1/4 cup vegetable oil; 1 tsp vanilla extract; 1 tsp cinnamon for the dough and 1 tsp cinnamon for the apples; 1/4 cup plus 1 tablespoon sugar for the dough and 1 tsp sugar for the apples

This spiced apple and pecan stuffing has long been a favorite for fall, and the High Holidays. This vegan challah bread is just as beautiful as it is delicious, and is sure to impress anyone who gets the privilege of tasting it. Stuffed with fall spices apples, pecans and dates, this vegan challah is my favorite for Rosh Hashanah!

Egg Wash (2 eggs mixed with 1/4 cup water) Crumb mixture (recipe below) Directions: Separate challah dough into balls then flatten each ball and place apple pie mixture in center. Pinch the ends together to close each ball. Place one ball of dough in the center of a parchment lined circle pan. (a pie pan works great for this!)

Braid strands starting in the middle, braiding each side and securing at the ends. Put challah on a sheet pan lined with parchment paper. Cover with plastic wrap and ferment another hour and a half until it is triple the size. Preheat oven to 350°F. Wash challah with last egg and bake for 35 minutes until golden brown.
